Mozaic Returns to The Legian, Seminyak

The latest installment in The Legian Seminyak, Bali’s series of weekends of culinary excellence, will welcome back Bali’s leading celebrity chef, Chris Salans of The Mozaic Restaurant in Ubud, during the weekend of 08-10 October 2021.

Just returned from Lyon, France, where Salans served as Team Coach to the Indonesian Team competing in the Bocuse d’Or, Bali’s leading food ambassador is a man of many parts. The chef-owner and inspiration behind the innovative and multi-award-winning Mozaic Restaurant in Ubud, Salans is also the author of a cookbook on French-style cuisine with Balinese accents, a TV celebrity chef, a former Garuda Indonesia Star Chef, and an inductee as a Chevalier – Order of Agricultural Merit by the French Republic for his pioneering devotion to French cooking techniques in the international promotion of Indonesian cuisine.

Chris Salans has a special emotional and professional attachment to  The Legian Seminyak, Bali, where, 25 years ago, his romance with the Island of Bali and Indonesian flavors commenced while working as Executive Chef at the Luxury Seaside Resort. Chris Salans repeated appearances as visiting chef at The Restaurant allows the American chef to recapture moments of his youth while creating new taste-filled moments for diners fortunate enough to join one of these repeat command- performances.  

The Mozaic Team will present three days of back-to-back dining pleasure in The Restaurant’s seaside venue during the latest return engagement. 

Each meal is accompanied by live jazz musical entertainment that gently punctuates the sound of breaking waves from the nearby Indian Ocean.

Friday – 08 October 2021 – Friday Seafood Affair

The Mozaic Restaurant Culinary Crew will present a tempting array of the oceans’ bounty from 5:30 pm until 9:00 pm. The attractively priced set menu will see 12-dishes placed before each diner highlighted by baked oysters, Salmon Tataki, Pan-Roasted Coral Trout, Grilled King Prawns, and Charred Octopus.

The Restaurant’s Head Sommelier, Suartika, will be on hand to suggest wine pairing to accompany each course.

An extensive set menu is available for Rp. 690,000 per person. An à la carte menu is also available.

All prices are subject to 11% government tax and 10% service charge.

Saturday – 09 October 2021 – Saturday ‘ad hoc‘ with Chris Salans

When Chris Salans is not busy cooking in a kitchen, he can be found personally surveying local and traditional markets seeking out the finest ingredients 

The term ‘Ad Hoc’ literally means “for this purpose.” It derives from The Restaurant’s raison d’etre: creating and curating fresh and delicious food for its guests based on only the best ingredients available in the daily market.

Chris’s desire to buy the freshest seasonal ingredients and then devise a menu is what inspires the Saturday evening ‘ad hoc’ dinner planned for 09 October 2021.

Diners are welcome to contact The Restaurant on Friday, one day before the ‘ad hoc’ dinner, to learn the results of Salans’ latest foray into the local market and the resulting menu planned for that night. 

A sumptuous set menu will be served for Rp. 690,000 per person in The Restaurant from 5:30 pm until 9:00 pm.

Sunday – 10 October 2021 – Sunday Jazz Brunch

Spend a relaxing Sunday relaxing and enjoying Indian Oceans vistas from the edge of The Legian’s Swimming Pool while savoring course after course of a Gourmet Sunday Brunch prepared by The Mozaic Team. 

Diners joining the Sunday Jazz Brunch are also welcome to use the pool, partake of the Wellness facilities, enjoy beach access, and delight their children with supervised kids’ activities – specially prepared for the younger set’s entertainment. 

Alfresco and enclosed dining options are available with live jazz music performed for brunch-time diners’ listening pleasure.

The Sunday Jazz Brunch is presented at The Restaurant and on the immediately adjoining poolside deck area.
